No Football for Me
Did you watch the Super Bowl? I confess - it’s not my thing. I know it has great commercials, The Saints were in it for the first time and they won, and The Who at half time was an amazing draw – even for me - BUT there are sooooooo many other things I’d rather do!
Sunday I dined with girlfriends. In the studio. I made delicious food. And I didn’t miss a single thing! Check out my recipe for Asian Noodle Salad – always a big hit!
ASIAN NOODLE SALAD
1 - 6.75 ounce pkg rice stick noodles (maifun)
4.5 T fresh lime juice (2 or 3 limes)
3 T fish sauce such as nampla or nuoc nam
2 t chili garlic sauce or to taste
2 t sugar
1 lb cooked med shrimp
1 c thin sliced cucumbers
1 8 oz pkg sugar snap peas, cut crosswise 1/2 segments around 2 c total (I used fresh)
1 red bell pepper, sliced thin
1/2 c loose packed mint leaves
1/2 cu loose packed fresh cilantro leaves
Cook noodles in salted water 4 to 5 minutes, rinse in cold water, cut noodles in 1/3rds with scissors. Wisk liquid ingredients w/sugar until dissolved, place cooked shrimp in bowl and add 2 T dressing to coat. Divide noodles in bowl, top with cucumbers and remaining ingredients, add shrimp on top. Drizzle remaining dressing atop.
I made Dave a feast while he watched it. Wings (okay, I confess, we purchased ready made at the grocery store), Asian Noodle Salad (shared), Spring Rolls and his favorite Italian beer with lime, along with pretzels, salsa and chips, etc. Chelsea was returning from a trip to the University of Oregon; she briefly visited us girls in the studio and then hung out with her dad watching the game. The thing is no one lacked delicious food around here. Food is a big component of Super Bowl Sunday every year!
Saturday I visited Laura and she’s happy to report that she is almost done getting her computer in order. It was made more complicated because she switched from a PC to a Mac and is working to make all of her PC programs work in her Mac. It’s been a tough road but she has my highest praise for getting it all sorted out.

I have been walking and snapping more pictures. I just love a pocket camera! I see things in the neighborhood that I don’t normally pay attention to. Look at this fence and my neighbor’s wonderful sense of humor. I smile each time I go by.
Dave and I took a beach walk last Wednesday. Look at the beauty we took in.

I also finished painting some chickadees and will be selling them at a gallery in Winslow, I am actually thinking of scanning them and making cards too.

Note that they are laying on a table runner that is still screaming for binding! Have I mentioned how much I dislike doing binding?
I am still pondering my next floor mat design. Sometimes I have to “sit on it awhile”. I am looking forward to a creative week and I hope you will be too!
